Chicken Enchilada Soup

Treat yourself to chicken enchiladas in bowl!

Soup is such a great thing in the winter — easy to put together and comforting. Also, great leftovers! I made this enchilada-inspired soup and loved my warm and tasty bowl!

Chicken Enchilada Soup
Slightly Adapted from Skinnytaste

Ingredients:
2 chicken breasts, about 16 oz
2 tsp olive oil
1/2 cup onion, chopped
3 garlic cloves, minced
3 cups low sodium fat-free chicken broth
8 oz can tomato sauce
1-2 tsp chipotle chili in adobo sauce (or more to taste)
1/4 cup chopped cilantro (plus more for garnish)
15 oz can black beans, rinsed and drained
14.5 oz can petite diced tomatoes
2 cups frozen corn
1 tsp cumin
1/2 tsp dried oregano

Season the chicken breast with salt, pepper, and chili powder. Cook, cut into pieces, and set aside. Heat oil in a soup pot over medium-low heat. Add onion and garlic and sauté until soft, 3-4 minutes. Slowly add the chicken broth, tomato sauce and chopped chilis with adobo sauce and bring to a boil. Add cilantro, chicken, drained beans, diced tomatoes, corn, cumin, and oregano. Stir, turn heat to low, and let simmer for 20 minutes. Adjust salt and cumin to taste. Serve and top with your choice of cheese, sour cream, tortilla chips (my choice: tortilla chips and cottage cheese!)

I would say the chipotle chili is not to be skipped — it adds the perfect amount of spice and deepens the flavor ….okay, so I feel like that “deepens the flavor” is probably something that I just heard on Top Chef and don’t have the expertise to say, but I think it’s true!

Any other Top Chef viewers out there?

I used to think that I wouldn’t like the show because the dishes seemed very snobby and ridiculously tiny portions.  I love the show now.  They have pretty unique challenges — crazy ingredients, cooking with blindfolds, making pancake for Peewee Herman!  Also, they have such a great skill for putting flavors together with perfect seasoning and texture.  It inspires me to do more tasting food as I cook to test out my palette.  Still a work in progress!

Another great thing about Top Chef — the judges. Padma and Tom are not joking around!  They can be light-hearted but they are also very direct and give great, sometimes tough, critiques

  1. Ooh, I love deep flavor!! This looks like a very forgiving recipe (another cooking website cliche). I actually have a can of chipotle chili in adobo sauce I bought probably 10 years ago and it has been sitting in my pantry every since. I think you just inspired me to open it. BTW, what should I do with the rest of the can?

  2. Hey, scratch that! I just dug out the ancient can of chipotle and noticed that the can was starting to bulge – so I tossed it! However, you have still inspired me; I’m going to buy another one so I can try this recipe.
