Poppyseed Apple Panini


About twelve years ago, I met a very nice boy in Mrs. Marske’s 6th grade classroom.

Six years and several awkward phases later, he asked me to be his girlfriend.

Later, he gave me a ring and asked me to marry him.


Two and a half years ago, I married that nice boy. It was an amazing day, full of love and smiles. As we celebrated with family and friends, we ate these sandwiches. Actually, I’m not sure either of us ate very much food that night — not even an amazing Mom-baked cupcake! Still, these sandwiches are kind of special for that boy and me.

You should try them too.


Poppyseed Apple Panini

8 slices bread or 4 ciabatta rolls
Sliced turkey
1 green apple, thinly sliced
4 slices provolone cheese
Poppyseed dressing

Butter one side of each bread slice.
Spread a few teaspoons of dressing on the other side.
Top with turkey, cheese, and apple slices.
Cook on a preheated skillet until each side is lightly browned.


This quick and easy meal is such a satisfying combo of of sweet, creamy, and crunchy. You can also make it a salad by chopping the ingredients and putting everything on a bed of spinach.

Give these a try and enjoy. You can make them for any occasion — it doesn’t have to be the day you marry your best friend!
