Sorry — no pictures for this recipe but I wanted to share because it’s a delicious and simple weeknight meal.
Picture this: ground beef with tried-and-true taco seasoning, onions, sweet corn, all topped with golden-crusted cheesy cornbread, spotted with green chiles. Mental picture is even better than a real picture right?
This is a repeat recipe in our house. Don’t you love those? No need to wonder if it will turn out or if the husband will like it…it’s already been tested and approved!
Don’t skip the green chiles — they make the cornbread extra tasty.

1 lb. ground beef
1 onion, chopped
3/4 cup salsa
1 package taco seasoning
1/4 cup water
1 cup whole kernel corn
1 package corn bread mix (plus 1 egg and milk)
1 cup shredded cheddar cheese
1 (4 oz.) can of green chilies
Preheat oven to 350 degrees.
Brown meat alongside onion.
Add salsa, taco seasoning, and water. Bring to a boil.
Reduce heat and simmer 5-6 minutes.
Stir in corn and spoon into 8×8 baking dish.
Prepare cornbread according to package directions, then add cheese and chiles.
Spread over meat mixture.
Bake for 30-35 minutes or until cornbread is golden brown.
If you don’t have a taco seasoning packet, you probably have all the spices in your cupboard to substitute!

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon minced onion
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons will equal about one packet.
