Popcorn mix covered in almond bark is an addictive, sweet-and-salty snack that is impossible to resist. I love any party with this snack present. Actually, it’s so addictive, it distracts me from talking to other people. Not a good problem. I could probably break myself away from the bowl long enough to find the person that made it and hug them.
I decided to make my own popcorn mix that uses some of the usual ingredients along with cinnamon cereal and cranberries. The results — crunchy, enjoyable, sweet, salty, and marvelous! You could easily swap the Cinnamon Chex for another cereal, like Cinnamon Toast Crunch (whoa good thought!) or regular Chex. I really like the cinnamon and cranberry mix because it seems perfectly holiday-appropriate.
Cranberry Vanilla Popcorn Mix
4 cups popped popcorn
3 cups Cinnamon Chex
1 cup pretzel sticks
1/2 cup Craisins
1/2 roasted salted peanuts
4 squares white almond bark (about 7 oz)
Mix first five ingredients in large bowl. Be sure all the unpopped kernels are removed.
Melt almond bark on stove or in microwave according to package directions.
Top popcorn mix with almond bark and stir carefully until all pieces are coated.
Spread on wax or parchment paper on baking sheet.
Let dry and then break apart pieces. Store in airtight container.
