I am still loving pancakes on a Saturday morning. It’s just so relaxing to stay in my pajamas, make coffee, and spend extra time making a special breakfast. Last week I made Orange Pancakes with Berry Orange Sauce, and they were amazing! Perfect pillows of citrusy goodness.
I’m sharing my version of the recipe with you today, which happens to be National Pancake Day. According to IHOP, at least.

Berry Orange Pancakes
Adapted from Iowa Girl Eats
Makes about 6 pancakes
juice of 1 orange
about 1/4 cup milk
1/2 cup flour
1 Tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 Tablespoons melted butter
3/4 teaspoon orange zest
1/3 cup frozen berries, microwaved for 20 seconds
Grease skillet and preheat to 350 degrees.
Zest the orange and set aside.
Juice the orange into a measuring cup. It should be a little less than 1/4 cup. Add enough milk to bring up to 1/2 cup, stir to combine, and let sit a few minutes.
Combine flour, sugar, baking powder, baking soda, and salt.
Whisk milk mixture with egg, butter and orange zest. Add to dry ingredients, and stir until just combined. Fold in berries.
Drop batter by 1/4 cup onto preheated skillet and cook 2-3 minutes per side.
I cut the recipe down to 2 servings since I’m the only breakfast-eater in the house. I like my version because you get the burst of juicy berries inside the pancake. Also, it doesn’t require orange juice — just one poor orange, zested and squeezed into oblivion.
I have my eyes set on making Cinnamon Roll Pancakes next. My sister recommended them and after a little searching, the drool-worthy images convinced me.
